VMW 254 Winery Process Planning and Design Lecture Hours: 3 Credits: 3
Focuses on winemaking systems, winery operations, utilities and equipment. Covers process technologies and systems used in wineries, winery design and layout. Stresses regulatory issues in planning and operating a winery and work place safety.
Prerequisite: VMW 122 with a grade of C or better; or consent of instructor. Student Learning Outcomes:
- Define requirements to establish a winery premise.
- Design a winery premise, including process layout and equipment selection.
- Explain operation and maintenance of winery systems and utilities.
- Identify and implement health and safety programs.
- Prepare state and federal compliance and regulation plans.
